Ingredients:
1 bag of frozen hash browns, thawed (32 oz - or so - doesn't have to be exact)
1 cup sour cream
1/2 cup milk
1/2 cup (or 1 stick) melted butter
2 cups shredded cheddar cheese
5-6 green onions, sliced - separate white from greens
1 cup diced bacon, precooked
salt & pepper to taste
Preheat oven to 400 degrees. In a large bowl, mix together the sour cream, milk & butter, to create the sauce. Add in the hash browns, cheese, bacon, the white part of onions, salt & pepper, mix well into the sauce and put into a pan (a large cast iron works best, but a casserole dish will do). Bake for 1 hour or until top is golden around the edges. After it's done, let sit for 10 minutes, then scatter the green onions on top.
It's so good you'll go home with an empty pot!

ReplyDeleteIn Utah we call these funeral potatoes. Someone always brings these to the meal after the funeral. These are also a good choice for potluck.
