Meatloaf Bites Recipe
For this recipe you will need:
1 pound of ground beef
1 pound of ground turkey (breast is best)
1 egg
1/2 cup ketchup, plus another cup or so for garnish
1/2 cup finely chopped onion
1 egg
1 cup of oatmeal
1 tablespoon salt
1/2 tablespoon ground black pepper
1 tablespoon freshly minced garlic
You’ll also need:
Preheat your oven to 375 degrees. Now let’s start on the ingredients.
Take your oatmeal and ground it up in either the food processor or a blender. I use my blender because it’s always on my counter, so if you don’t have a food processor, then it works just fine. Grinding it up makes the texture of the meatloaf much better than leaving the oatmeal whole.
Put the oatmeal and all the other ingredients in a bowl, and mix them together by hand until everything is incorporated well, just like making regular meatloaf.
Using a small portion scoop, or a tablespoon, and portion out the mixture onto a baking sheet. Then roll it like you would a meatball, and slightly flatten it just a bit.
Top each one with ketchup using a condiment bottle. It only takes a little. Bake for 15-20 minutes or until the edges start to brown. Since they’re so tiny they cook lightening fast!
Put your meatloaf bites on a platter and you’re done. You can do the whole shebang in about 30 minutes, and you’ll be the MVP of the appetizer team!

Great idea…thinking we’ll do mini-meatloaf for dinner. I cook them in a muffin tin and my sauce has a touch of added brown sugar and vinegar.
