Football and The South – have two greater pairings ever been made? Southerners loveeeee football – whether it’s basking in the Friday night lights of the local high school team (go Wildcats!) or hanging out to watch a super college bowl game. Of course, when you’re spending Sunday on the couch cheering on your team, you need some snacks, right? If your man fits in the “meat and potatoes guy” category, you can place bets on this easy appetizer recipe: meatloaf bites. And, bonus, you can feel better about making it, since it’s a healthier version of the old dinner standard.
For this recipe you will need:
1 pound of ground beef
1 pound of ground turkey (breast is best)
1/2 cup ketchup, plus another cup or so for garnish
1/2 cup finely chopped onion
1 cup of oatmeal
1 tablespoon salt
1/2 tablespoon ground black pepper
1 tablespoon garlic powder
Preheat your oven to 375 degrees. Now let’s start on the ingredients.
Take your oatmeal and ground it up in either the food processor or a blender. I use my blender because it’s always on my counter, so if you don’t have a food processor, then it works just fine. Grinding it up makes the texture of the meatloaf much better than leaving the oatmeal whole.
Put the oatmeal and all the other ingredients in a bowl, and mix them together by hand until everything is incorporated well, just like making regular meatloaf.
Using a small scoop, or a tablespoon, and portion out the mixture. Then roll it like you would a meatball, and slightly flatten it just a bit.
Put ketchup on top of each one, I used an old fashioned bottle to act as sort of a piping bag. It only takes a little. Bake for 15-20 minutes or until the edges start to brown. Since they’re so tiny they cook lightening fast!
Put ’em on a platter and you’re done. You can do the whole shebang in about 30 minutes, and you’ll be the MVP of the appetizer team!
