Cherry limeade should be the official taste of summer, don’t ya think? Sweet and tart and refreshing and yummy – all at the same time. There’s something about that first sip that just cools you down and makes you appreciate summer just a little bit more. Yep, I love a good cherry limeade. So what’s even better than that? A grown up coconut cherry limeade. Oh yeah, I did. It’s kinda like adding ocean water (the drink, not the real stuff) to a cherry limeade. But for grown ups, meaning with alcohol. Because cocktails make everything better, right?
Ingredients:
- juice of two limes
- 1/2 oz of grenadine (a cherry flavored syrup)
- 1/2 oz simple syrup (1 cup sugar, 1 cup water, heated until sugar melts)
- 1.5 oz of coconut rum
- splash of mineral water (I like Pellegrino)
In a cocktail shaker, put in 1 cup of ice plus all the ingredients except soda. Shake for 20-30 seconds, then pour over a glass of ice, then top with mineral water and gently stir. Pop a cherry on top and enjoy the sweet taste of summer.
While you could sip on these while chillin’ with your best buds, they also make a great accompaniment for long working hours. If your boss will let you drink 🙂 Luckily I’m a really good boss.
Coconut Cherry Limeade Cocktail

Can’t wait to try them….I come up with a different cocktail every summer for our guests that come to our beach house…the Coconut Cherry Limeade sounds like a winner for this southern girl!!!!
