There are certain memories as a kid that you just never forget, especially growing up in a small town. I remember going to see my grandparents, and when my granddaddy got home from running his sawmill, he would take me to our small hometown square to stop by the little local pharmacy to get a Coke Float. To this day, I still remember him sitting there, letting me talk endlessly about all the things running around in my head while he just listened. Fast forward to today, the pharmacy is long gone, but the memories have lasted. Although my girls have had Coke floats a few times, they just don’t get super excited about them. But when I decided to try and make Coke Float ice cream – let’s just say that the first batch disappeared even faster than most store bought ice cream. Want to share it with your family? You’re in luck! That’s what I’m sharing today – the recipe for Coke Float Ice Cream.
Coke Float Ice Cream Recipe
Ingredients:
- 4 cups of heavy whipping cream
- 2 cups of whole milk
- 1 1/2 cups sugar
- 5 egg yolks
- 1 tablespoon vanilla
- 16 oz. of Coca-Cola (which is 2 bottles of Coca-Cola Mini)
- In a metal bowl (large enough to fit over a pot to act as a double boiler), whisk together the egg yolks and sugar until the yolks become light yellow and thicker.
- Fill the pot half way with water and bring to a simmer.
- Add the milk and cream to the yolk and sugar mixture and whisk together well.
- Put over the pot to act as a double boiler, and lightly whisk constantly until the mixture thickens.
- Fold in the vanilla and Coca-Cola.
- Put in the refrigerator until completely chilled.
- Use the mixture in an ice cream maker (follow the directions for your model.)
- Once the ice cream is finished in the maker, you can put it into a freezer safe container and pop it into your freezer to help firm it up if needed.
