Mini-meringues – are they a cookie or a candy? Either way, they are simple & delicious! If you’re looking for the easiest, no-fail, guilt-free recipe for your baking list this year, my Cranberry Meringues are exactly what you’re looking for.
To make Cranberry Meringues you will need:
Ingredients:
3 large egg whites
1/2 cup sugar
1/2 cup dried cranberries
1 tsp. vanilla
Preheat oven to 350 degrees. In a food processor, mix together the sugar and cranberries. Pulse until the cranberries are chopped up, but you still want a dry mix.
With a mixer, whip the egg whites to stiff peaks. Fold in the sugar/cranberry mix, along with the vanilla. Whip the eggs again, to refluff them (yes, it works.)
Pipe small mounds (about a tablespoon) onto parchment paper or non-stick aluminum foil. Put them into the oven, then turn the oven off, letting them sit in there until the oven is cool (2-3 hours) – or overnight. Do not open the oven! When they come out, they will be lightly browned and delicious!
This guilt-free treat is virtually fat-free and has about 35 calories per cookie… does it get any better than that?

I made these and they didn’t work 🙁
I remixed the eggs after folding everything in
and it just turned to soup.
Any suggestions?
Gina Luker says
It might have been the humidity – that seems to happen if it’s too humid outside (weird, I know!)
Daniela says
How much time does they need to cook. it just says put in the oven and then turn it of. Is it imeadiately?
Gina Luker says
Yes immediately turn them off and let them sit there for about 2 hours or until the oven is cool.
Jennifer says
We followed the directions to the letter and upon retrieving them from the oven they weren’t very brown and very sticky! What would be the cause of that I wonder?
Gina Luker says
Hmm, I am not sure Jennifer, every oven differs so maybe it wasn’t hot enough? So sorry they didn’t turn out for you but I hope they were still yummy!
