I have a confession: I actually can cook. I’ll tell you that I’m not the world’s greatest, and while I’m no Nigella Lawson, I can basically cook anything you put in front of me. Here’s the tricky part: I don’t cook. Well, not very often anyways. When I do finally break down and get my hands dirty in the kitchen, the results have to be quick & yummy. Since this week is basically the mother of all cooking holidays, I thought I’d share a recipe: Easy mini apple pies.
You’ll need:
2 apples (Golden Delicious is my favorite for pie making)
some sugar (maybe 2/3 cup or so)
3 tablespoons flour
cinnamon (about 1 tablespoon)
3 tablespoons butter
one egg
wonton wrappers
cooking spray
Sprinkle your flour mixture over the apples and cook for about a minute, so that you create a roux for the filling.
Add in 1 cup of water, and cook until it boils again, whisking the mixture until it’s thick. Apple pie filling – YUM! Set aside and let cool a bit.
Use the egg to create an egg wash, then in a separate bowl mix the remaining cinnamon and sugar.
Now let’s make pie! Take a wonton wrapper (just one at a time) and use the egg wash to put a thin layer on two sides. (I use my fingers, so much easier than a brush!)
Place about a teaspoon of the filling right in the middle of the wrapper. Not too much!
Then fold it over and smush the edges together. The egg wash acts like a glue to hold it all together.
Now lay them on a baking sheet, coated in cooking spray. Use a brush to coat the tops of them with a layer of egg wash.
Then sprinkle them with the cinnamon sugar. Pop them into a 400 degree oven for 10-12 minutes – and you’ve got quick and easy apple pies!
One pack of wrappers and two apples will make 50 of these bite size beauties. So quick – so easy – so yummy! These might just be the perfect party food 🙂
Mini Apple Pies
Ingredients
