Summer is all about grilling – and nothing is safe around our house once the grill is lit. Steaks, chicken, fish – we pretty much throw whatever we eat on the grill during the hot weather months, because there’s nothing worse than fighting 100 degree temps by firing up the stove at the end of the day. Plus, hello charcoal… it’s a steak’s best friend, right? My favorite kind of steak seasoning is Chicago Style grill seasoning – and it’s good on just about anything you can cook (even veggie soup!) I’ve never found one that I loved entirely, so I combined parts of what I liked from store bought mixes and created my own grill seasoning.
This recipe is super, duper simple. In a bowl combine:
- 3 tablespoons kosher salt
- 1.5 tablespoons freshly cracked black pepper
- 1 teaspoon crushed red pepper flake
- 1 tablespoon fennel seeds
- 1 tablespoon dried minced onion
- 1 tablespoon dried minced garlic
Combine all of the ingredients and store them in a jar, so you’re ready to grill any time. Of course, it’s more than just grilling – you can use it to season everything from pot roast to meatloaf, I use it more as my own personal “house seasoning” than anything else. Because it’s so, so good that it compliments almost anything.
Of course, if you don’t like fennel – leave it out. More of a rosemary fan? Add it in. This recipe is just a basic method so you can create your own seasoning just by tweaking the ingredients to suit your own tastes.
