Easy Cake Mix Monster Cookies

We’re at the end of Halloween in Jars week – and it’s been pretty cool to get to do stuff for a holiday that, while I love, I don’t really craft much for. So what would Halloween in Jars be without something to fill the cookie jar? So in honor of my favorite little monster (my grandson Brady), I made him a batch of these fun cake mix monster cookies. Want to make them?

Cake Mix Monster Cookies Recipe

Ingredients:

  • White cake mix (any brand)
  • 2 egg whites
  • 1 stick of butter, unsalted, room temperature
  • 1/2 cup (or so) of flour
  • sprinkles/colored sugar
  • candy eyes  (you can find them by clicking on the words for my affiliate link or in the baking aisle)

Directions:

Preheat the oven to 350 degrees. In the bowl of a stand mixer (you can also do it with a hand mixer), mix together the cake mix, 2 egg whites and a stick of butter. Mix it until it comes together, and it will be thick but sticky. Spoon it out on a large piece of plastic wrap and wrap it up tight, then pop it into the fridge for an hour or two (or even overnight.) Once the dough is firm, cut it into 12-14 pieces. Use the flour to coat your hands, then roll each piece into a ball. Press out the ball into a flat disc while pressing it into the sprinkles or the sugar. Make sure each piece is coated well, then put onto a non-stick cookie sheet. Place the candy eyes on top before baking. Give them plenty of room (about 5-6 to a sheet pan) because they will spread quite a lot while cooking. Bake for 10-12 minutes, or until the bottoms are golden brown. Place on a cooling rack to allow them to cool before serving.

Halloween Cake Mix Monster CookiesExtra tip: As soon as the cookies have come out of the oven, use a knife (or chopstick or whatever is thin) and push the eyes a bit so they sink into the cookie a tiny bit. The freshly baked cookies will kind of grab on, just in case the eyes did not adhere while baking (the sprinkles really shield them sometimes.)
