Love bang bang shrimp? These buddha bowls are an awesome spin on it!

Have you ever had bang bang shrimp? It’s spicy and creamy and sweet and sooooo good! So I decided to try to put those flavors into a “buddha bowl” – and it’s quickly become a favorite at our house. As empty nesters, it can be difficult to find meals for just two people, but these work beautifully for 2 people or 20 people.

What’s a buddha bowl, you ask? It’s a one bowl dish with a grain, veggies, protein & sauce. We like a combination of fresh and roasted veggies for our version, but you can easily take off or add whatever you’d like. I love avocado… my husband, not so much. You can also control how much or little sauce you like.

If you like my spicy grilled shrimp tacos, it’s very similar to that, but in bowl form. 

Also note… you can use whatever grain you prefer (but whole grains are best.)

Bang Bang Shrimp Buddha Bowls

Ingredients

  • 1 1/2 cups cooked quinoa or your whole grain of choice
  • 8-12 pieces of shrimp - sautéed in olive oil
  • 1 cup raw veggies tomatoes, cucumber, avocado, etc.
  • 1 cup roasted veggies try sweet potatoes or carrots!
  • bang bang sauce:
  • 1 tablespoon sweet Thai chili sauce
  • 1 tablespoon sriracha
  • 2 tablespoons mayonnaise

Instructions

  1. Cook all the bowl ingredients and layer them together as you'd like.
  2. Mix together the bang bang sauce, then drizzle on top.
  3. Enjoy!
