cocktail hour: coconut mojito recipe

A really great mojito recipe is hard to beat – but my coconut mojitos kinda take it up a notch. We love a good pitcher of cocktails on the porch around here – and this one was a major hit (it’s my most requested cocktail.) Limes & coconut & minty goodness – what’s not to love? A pitcher of these and a few friends and it’s an instant party at home. With just a few ingredients, we can enjoy a sip of summer.mojito recipe

Ingredients:

  • 20 sugar cubes
  • juice of 4 limes
  • 10-12 mint leaves
  • crushed ice
  • 8 oz of coconut rum
  • 16 oz mineral water (I love Pellegrino)

In a pitcher, add in the sugar cubes, fresh lime juice, mint leaves, coconut rum and 1 cup of crushed ice. Moddle together to mix the sugar in and  crush the mint to bring out all the flavors.  Once combined, add in mineral water and stir to mix together. Fill your glasses and top off with ice to fill the glass. Add on a lime wedge to garnish and enjoy.

Coconut mojitos are the perfect way to sip in celebration to summer – hey if mojitos were Ernest Hemmingway’s favorite drink, then that’s good enough for me!
