Hi there Shabby Creek Cottage readers! It’s Laura, back from Inspiration for Moms with a fun dessert recipe just for you. Spring is finally here and it’s time to celebrate with a fabulous treat that is packed full of mint. My Double Mint Brownies are irresistibly cool all because of a secret ingredient!
Before we get to this sweet mint brownie recipe, I just have to introduce you to my newest sweetie. π
Britton was born on February 6 and the whole family is just ga-ga over him. My first son was textbook, but Britton is full of surprises and of course, has to be different. I should have known by how long it took this sweet little guy to enter the world. You can read all about it in my birth story post ! π
Now that my hands are full with a newborn, I have very little time to spend cooking in the kitchen. Dinner is hard. Dessert is impossible. But not with this recipe. All I need is 10 minutes and my secret ingredient to get the best mint brownies in town. That’s right, a box of Junior Mint candies is what fills these dark chocolate brownies full of bursting mint flavor!
To make, I simply pour half the batter into a baking pan. Then top that with a layer of Junior Mints and cover with the remaining batter. Once the brownies are baked and cooled, it’s time for my second layer of mint goodness…Mint Chocolate Chip ice cream! I know sometimes I suggest ice cream as a topping but this time…I’m insisting. Trust me on this. π

Double Mint Brownies
Prep Time: 10 minutes Cook Time: 45 minutes
Serves 9
Ingredients:
- 1 Box of Brownie Mix
- 1 Box of Junior Mints
- Mint Chocolate Chip Ice Cream
Directions:
Mix brownies according to box directions. Spread half the batter in a 9×9 greased baking pan. Arrange Junior Mints in a single layer over the batter. Spread the reserved batter over the Junior Mints. Bake at 350 for about 40 minutes or until brownies start to pull away from the sides. Cool completely in pan on wire rack. Cut into 9 squares. Serve with Mint Chocolate Chip ice cream.
