Learning to rethink my eating patterns for life means that I need to rethink my cooking. I’m never gonna give up dessert. No way, no how, nuh-uh. So learning how to plan out my choices and make better decisions on how to satisfy my sweet tooth was essential for long term success. Don’t get me wrong, I’d love to eat a huge brownie with tons of ice cream and caramel syrup topped with loads of whipped cream. Oh yeah. But, my goals are stronger than my will for chocolate. So, I figured if I could trim down an easy apple crisp recipe, then I could have my sweets and smaller size, too.

Easy Apple Crisp Recipe

Filling ingredients:

  • 4 granny smith apples, peeled, cored and diced
  • 4 golden delicious apples, peeled, cored and diced
  • juice of 2 Meyer lemons (or regular lemons if you prefer)
  • 1/2 cup of light brown sugar
  • 1 tsp cinnamon
  • pinch of salt

For the topping:

  • 1/2 cup of granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all purpose flour
  • 3 cups old fashioned oats
  • 6 TBS butter, cold in small cubes
  • 2 TBS maple syrup
  • 1/2 cup very cold water

Directions:

Preheat the oven to 350 degrees. In a bowl, mix together all of the ingredients until throughly combined and put into an un-greased 9×13 baking pan.

In the bowl of a mixer, place in the first five ingredients (all the dry plus butter) and mix with a paddle on medium speed until butter is broken up into small pebbles. (You can also do this with a dough cutter.) Then, add in the maple syrup and  combine a few more seconds. After the syrup is distributed, add in the water, 1/4 cup at a time, until you have a crumbly consistency. Scatter the mixture on top of the apple filling and bake in a 350 degree oven for 1 hour.

After baking, let the crisp cool for a few minutes before serving. If you wanna up the ante, add a scoop of ice cream for an out of this world experience.

Makes 12 servings at 260 calories per serving

This apple crisp recipe is a little tart and not too sweet, but we love it. If you have leftovers, put it all in a bowl and refrigerate, and heat up slightly before serving. It’s perfect for breakfast, because the oatmeal topping softens and makes a delicious change from the fresh out of the oven version.

    Yum – I love apple crisp. I would have to totally resist the urge to smother it in vanilla ice cream and eat way to much of that goodness. Pinning!
