Berry Breakfast Parfait with Simply Scrumptious Granola

Squeezing in breakfast isn’t always easy, especially if you’re trying to eat healthier. I’m never in the mood to cook early in the morning, which is why my go-to breakfast has to be yummy & lightening fast. I’m no Nigella Lawson, but my recipe to a great start of the day is Berry Breakfast Parfaits with Simply Scrumptious Granola. And did I mention that it’s under 200 calories? It’s perfect for those with weight loss resolutions.

It’s such a simple concoction, it’s not even really like cooking. Except for the granola – but it takes like 2 minutes of work. I make the granola at night, but you really only need to make one batch a week. (Unless your kids decide to help you eat it, like mine.)
For the granola:
Melt 1/2 stick of butter in a microwave safe bowl. Once melted, add in 1/2 cup of honey and combine. Once the liquids are mixed, add 3 cups of quick cooking oatmeal. Mix it all together thoroughly, then lay out in a thin layer on a baking sheet. Bake at 350 degrees for 10-15 minutes, stirring it every 2 minutes or so. After it’s all golden, remove the pan and let it cool, then store in an airtight container. Simple, huh?
200 calorie breakfast

For my parfaits, I layer 1/4 cup of low fat vanilla yogurt (greek yogurt is yummy in this recipe, too!), 2 medium strawberries, sliced, then 2 tablespoons granola. Repeat for a 2nd layer (so you use 1/2 cup yogurt, 1/4 cup granola & 4 strawberries total.) It takes about 3 minutes – a quick trip to breakfast heaven. You could mix it up with other berries, which would be totally delish!

I’m a creature of habit, so I’ve been having this same breakfast for weeks now, and I’m slowly seeing progress on the scale. With recipes like these, I don’t even really feel like I’m on a diet 🙂

    Yum! I will definitely have to make some of that granola! I am trying to eat healthier this year and this is perfect. I make green smoothies for my hubby and myself for breakfast when we are eating right. They are delish! I will have to post them on my blog soon….:) Thanks for the visit and comment the other day!
