Loaded Potato Casserole

With the holidays upon us, potluck dinners are abundant, it seems like every week there’s a family or church function. Want a dish that will stand out from the sea of macaroni? Then my Loaded Potato Casserole is just what you need.

Ingredients:
1 bag of frozen hash browns, thawed (32 oz – or so – doesn’t have to be exact)
1 cup sour cream
1/2 cup milk
1/2 cup (or 1 stick) melted butter
2 cups shredded cheddar cheese
5-6 green onions, sliced – separate white from greens
1 cup diced bacon, precooked
salt & pepper to taste

Preheat oven to 400 degrees. In a large bowl, mix together the sour cream, milk & butter, to create the sauce. Add in the hash browns, cheese, bacon, the white part of onions, salt & pepper, mix well into the sauce and put into a pan (a large cast iron works best, but a casserole dish will do). Bake for 1 hour or until top is golden around the edges. After it’s done, let sit for 10 minutes, then scatter the green onions on top!

    Hi Gina- I make these, too. They call them Nana’s Party Potatoes at my house and laugh because I always make them for gatherings. They LAUGH but, guess what? The pan is always empty by the end of the meal! Happy Sunday to you- xo Diana

    Looks amazing. I do a similar one but I don’t use the milk and butter. I use cream cheese instead!

    Could you please tell me approximately how many Hash Browns you would use in the recipe. I live in Australia and I’m sure that our packet sizes would be different.

      A bag of hash-brown potatoes usually is 32 ounces or 4 cups.

    In Utah we call these funeral potatoes. Someone always brings these to the meal after the funeral. These are also a good choice for potluck.

      Once you make these you will make them often…for potlucks, picnic, buffets, special dinners. To me it’s like potato chips…cannot just eat a serving.

    Looks SOOO good!! BTW, I love aqua too. Have a spray can of Rustoleum waiting for it to be warm enough for me to use it outside so I don’t give myself an asthma attack from it, lol.
