Low Calorie Dessert: Strawberry Sorbet

I’m always looking for healthy recipes to help lose weight. Lots of you asked me what I do to curb the cravings when I posted about my weight loss, so I thought I’d share: Strawberry Sorbet. At first, I bought it from the store, until I realized what an idiot I was for paying $4 for a cup and a half of strawberries, sugar and water. Since strawberries are pretty cheap around my area right now, I decided to make my own… and I’m so glad I did.

Since I don’t have an ice cream maker, I had to get creative on how to make it at home. I started with 2 pints of strawberries. I cut up one and a half of them and put them on a sheet pan, then put them in the freezer until they were little strawberry ice cubes.

I took the other pint, plus 2 cups of water and 1/2 cup of sugar, and cooked it all down until I had strawberry syrup. Once the syrup was completely cooled, and the berries were all frozen, I put it all in my blender and pureed it up like a milkshake. I put it all in a plastic bowl, and popped it back into the freezer to harden over night.

The next day it was all frozen together, so I set it out on the counter for a few minutes before serving (just like I do ice cream.) It’s soooooo easy, and soooooo good! I’ve tried it with peaches and with pineapples, and both of them are amazing, too!

The strawberry makes twelve 1/2 cup servings, and only 75(ish) calories per serving.

Ingredients

  • 2 pints of strawberries
  • 2 cups of water
  • 1/2 cups of sugar

Instructions

  1. Dice and freeze 1 pint of strawberries.
  2. Cook down the other pint of strawberries with 2 cups of water and 1/2 sugar until it's a syrup.
  3. Let the syrup cool.
  4. When cooled blend the frozen strawberries and syrup until smooth.
  5. Put in a container and freeze.
Pure, simple, satisfying. YUM!

    I so hope you’re still having good results losing weight. I know how hard it can be. When I was born my thyroid didn’t work at all. I was ok weight wise til I became a young woman, started having kids, then watch out. It’s been a struggle since.
    This last year I lost some weight just working hard outside clearing out our shed in the heat, running up and down hauling things to house to go thru on the deck. Didn’t even realize I was losing, the best way huh?
    I watch it by checking my weight every couple days so I don’t go over a certain weight. So far I’ve been able to eat pretty much what I want within reason, we eat a low fat diet and prepare our food healthily. But there’s those cakes, cookies, chips, naughties just waiting for me to over do. I love to eat, especially naughties. I grew up eating desserts after every meal and goodies (home made cakes, pies and cookies) very frequently.
    Gina I can hardly wait to make this. Never ventured into making something like that but if it will help keep me from eating cakes, cookies, etc. it’s a winner. I have a terrible craving all the time for things I know I shouldn’t eat but I eat them anyway. I love ice cream but have pretty much stayed away from it over the winter but watch out this spring and summer.
    I’m so glad you shared this recipe. If I keep things that are good for me in the house I’m ok, just can’t have naughties in the house. No will power. Good luck to you Gina. Keep up the good work. You’ll get there. Happy Weekend.

      Congrats on your weight loss! It’s still working – even when I give myself a break to eat “naughty” I still can’t eat as much as I once did, so I’m still on track. It gets easier every day, yet it’s still coming off ๐Ÿ™‚

    Loving this additional aspect to your blogging. I too struggle with weight, after baby, after stopping smoking and after losing gall bladder…it all became a lot harder than I ever thought it would be. Great to have ideas like this and although strawberries are out of season here I will go find some frozen ones and get this on!!!
    I don’t have a sweet tooth ….my downfall is cheese but funny how a little treat like this just makes me feel like I am not denying myself stuff.

      Thank you so much! I’m always afraid y’all will get tired of ‘diet talk’ – haha! It’s not easy, but I rarely limit myself from anything, I just eat much smaller amounts. Just a little cheese goes a long way, ya know!

      I’ve never done it with all frozen strawberries Nanci, I would just follow the recipe the same and use the same amount of frozen that you would fresh. I hope it works for you!!
