First, you start with a regular chocolate or devil’s food cake mix. Any brand will do. You’re going to mix it according to the directions (but I always add a TBS of vanilla to the mix because I swear it tastes better that way.) You’ll also need some regular size marshmallows and some chocolate frosting. Again, from scratch is fine, but I’m lazy and stuff.
After you mix the cake batter, fill cupcake liners 1/2 way with batter. Push a whole marshmallow into the center, then bake according to the directions.
When the come out, just know ahead of time that the marshmallow will fall a bit. You’re going to have a small dip in the top. It’s all good – don’t stress out 🙂
Use a spoon to help coax the cupcakes out of the pan – gently – and put them on a cooling rack to cool.
Then, frost your cupcake as normal. It’s going to cover up all the ugly, but also add another level of yum.
They’re like covert cupcakes – they look totally normal on the outside, and then BAM! the inside takes you by surprise (unless you know it’s in there!)
Don’t hold it against me if you have to have an all day dance fest to work off all the calories…. the marshmallow in the middle chocolate cupcakes can be kind of addictive. You’ve been warned!

Upon making these delicious looking cupcakes I found that it is very hard to get them off the pan with out them falling apart within the cupcake holder. I followed the directions twice and both times the same thing. Although delicious looking I believe I will try adding the marshmellow after for the third batch. Thanks for the recipe!

Awesome and easy recipe.. I followed the directions except I used a half of a marshmallow before baking and I didn’t have the spill over so the cupcakes just popped out of the pan. It didn’t make as large as a hole but I was still able to push a whole marshmallow in after baking. I also added crumbled graham crackers after frosting and a toasted marshmallow to the top(placed marshmallow on a cookie sheet under the boiler until toasted and than placed on top of cupcake)…..BIG hit with the teens. I made these cupcakes but used a bigger cupcake pan. I found that when I put the marshmallow in the middle and baked them the marshmallow rose to the top as the cupcakes baked. I was therefore unable to put in the second marshmallow. They were still delish but next time I will bake in a smaller cupcake pan and use paper liners like you did. Practice makes perfect. I will make perfect cupcakes with marshmallow in the middle if it’s the last thing I do. Thank you so much for this great recipe. If you know why this happened please let me know.

Try using the aluminum cupcake liners. I use them all the time. They seem to be better getting it off a cupcake, plus you also get a paper liner between each foil liner.

Yes, the first marshmallow melts and creates a hole, so you put a second marshmallow in the hole and bake for just a bit longer. Let it cool and then frost 🙂 Re-read the post I show it step by step. They are super yummy 🙂

It’s just that I have a school project and my teacher told me to say how many servings there are and how many do you need to make 30. It yields about 24 cupcakes. The marshmallow takes up some room so you get more than if you just had the batter. It is from a box mix so just look at the box yield and understand you will get more because of the marshmallow. I suggest you try making them and then you will have all of the answers to your project questions. Note though, it does not have more than 8 ingredients. Good luck 🙂

Made these for a pig roast yesterday with a gummy pig on top for decoration. They were delicious! Mine did not get as defined a “well” during the first bake but I still didn’t have a problem putting in the 2nd marshmallow. It was a lot of fun watching the marshmallows puff up then deflate in the oven 🙂
I used paper muffin tin liners and clean up wasn’t too bad, especially for the ones I filled just half full with batter. Of course on some, I filled them a bit more and these were the ones that bubbled up and over the edges. Will make these again.

Omg. These are so good. The Marshmallows in the beginning crystallize to form the crevice for the marshmallow at the end to melt in. Then you can decorate and ice as normal. You use a box mix so it will make a few more due to the added volume of the marshmallows but it’s pretty foolproof. Great recipe. Thank you for the content.
