Love the classic cornflake no bake cookies? This version made with tortilla chips is the childhood favorite, but all grown up and ready to fiesta!
“I think I have a crazy idea” is my very favorite way to think. Because all realllllly good ideas are usually a little bit out there. And this is one of them. I had this idea a few weeks back, and when I mentioned it to my daughter, her response was, “Ummmm… I don’t know about that.” And my husband said the same thing.
We love the classic peanut butter corn flake no bake cookies, so I thought using tortilla chips instead would be like a salty/sweet version. And I love me a good sweet & salty snack.
But one Saturday afternoon I had a serious case of sweet-tooth-itis and decided to try them. And man… oh man… are they good. They are definitely a bit different than the corn flake kind, because the tortilla chips are a bit thicker so they are chewier. And the salt does that magic thing that just makes my sweet tooth a million kinds of happy.
PEANUT BUTTER TORTILLA CHIP NO BAKE COOKIES
Ingredients:
- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 4 cups of tortilla chips, slightly crushed
Directions:
- In a sauce pan on medium high heat, combine the syrup, sugar and peanut butter. Stir constantly and bring to a boil to melt all the sugar.
- Once the sugar is melted, take off the heat and fold in the tortilla chips.
- Spoon out onto wax paper and let cool for an hour before enjoying.
- If you like things a bit more salty, lightly sprinkle with kosher salt before cookies set.
