Has there ever been a better match made in heaven than Peppermint Buttercream frosting and chocolate cake? I think not. The mint/chocolate combo is one of my favorite sweet duos, no matter what time of year it is. Holiday season? Bring on the candy canes. Any other time of year? I don’t care – I still love mint and chocolate together.
After I tried the perfect Chocolate Cake from i am baker – I knew that bringing in mint would send it over the top. So I did. Yum.
Peppermint Buttercream Frosting
ingredients:
1 – 8 oz. package of cream cheese (at room temperature)
2 sticks unsalted butter (at room temperature)
2 pounds of confectioners sugar
1 tablespoon vanilla extract
1/2 teaspoon peppermint extract (you can use more or less if you’d like according to taste)
In the bowl of a mixer (or with a handheld mixer), whip together the butter and cream cheese until thoroughly mixed. Gradually add in the sugar until it is all combined, then add in the extracts and whip again for 2 minutes until fluffy.
So, so simple. But it’s kinda magical on top of Amanda’s cake – especially when you use it to make cupcakes. Have mercy.
Wanna up the yum factor? Crush come candy canes and sprinkle on top of the peppermint buttercream frosting. Outta. This. World.
