I’m grasping on to summer and holding on as fierce and as long as I can, because each day seems to bring us closer to fall. I’m a summer girl at heart, and would rather spend my days barefoot on the beach if I had my way. Alas, school is in session, summer is drawing the end all too quickly, but that doesn’t mean that I’m going to give up my summer cocktails. Oh no. Even in the dead of winter if I have a fruity concoction in my hand then all is right with the world. Which is why I’m sharing my Pom Hula-tini – it’s like a sip of summer on a tropical beach, but you can have it anywhere.
Never mind that martini’s are usually made with vodka – we’re going with rum. Because honestly I just couldn’t come up with a better name for it. If you wanna rename it, I’m all ears 🙂
First things first you’re going to need some Pom Hula juice – or regular old pomegranate juice with some pineapple juice works well, too (60% pom, 40% pine).
Pom Hula-Tini
In a cocktail shaker with ice, add in:
2 oz. Pom Hula juice
1 oz. coconut rum
.5 oz triple sec
juice of 1/2 an orange
.25 oz. of simple syrup (if you like drinks not so sweet, you can leave this out)
Put it all in and shake it all about for 15-20 seconds, until the whole thing is well chilled.
Pour into your glass and it’s like going on vacation. You can garnish with whatever you’d like – an umbrella… or pineapple… but orange zest works great, too! Hope you’re enjoying the last drop of summer!

Ingredients
