Potato soup recipes are always welcomed in my kitchen. When the weather gets cold and the snow seems like it’s ready to cover the world, potato soup is the only thing on my mind. And who wouldn’t want a warm bowl of comfort food while snuggling up for a snow day. The pantry staple means you can be ready to whip up a batch with little time or effort. But basic potato soup can get pretty boring fairly quickly. So if you can find a way to bring a little more variety to the party, then you’ll make all the taste buds in your family a whole lot happier. Oh – and because potatoes are one of the most filling veggies you can buy for your money. Stretch it out a bit with other veggies or some protein and you can make a whole meal in one pot. Just add a loaf of (freshly baked) bread and you’re the rock star of dinner in no time flat.
