Root Beer Float Popsicles

Fun Summer Treat: Root Beer Float popsicles!

My Root Beer Float Popsicles are a sweet twist on the famous float. It’s just more fun to eat when it’s made into a popsicle, right? 😉

Some similar float recipes have very distinct, individual layers. But who wants a layer of just plain ice cream? Not me! The trick is to mix the Root Beer and ice cream as you fill your molds. Start with the Root Beer than add some ice cream, then take a spoon and poke that ice cream around. It’s not a very technical process, but necessary none the less.  The more you mix the layers, the more you will get that true classic float taste!

As you might guess, this treat is a little high on the calories. But you could always modify with frozen yogurt in place of the ice cream. The best part of the whole popsicle is the very last bites, compacted full of Root Beer and ice cream sweetness!

Root Beer Float Popsicles

Prep Time: 10 minutes Freeze Time: 12 hours or overnight

Ingredients:

  • Root Beer (chilled)
  • Vanilla ice cream
  • Popsicle Mold

Directions:

Pour a small amount of Root Beer into each mold. Then add some vanilla ice cream. Top with more Root Beer. Use a small spoon to push the ice cream down into the Root Beer to mix the flavors. Repeat the layers as needed. Scrape off any excess foam. Insert your sticks and then freeze for 12 hours or over night.

To remove popsicles once frozen: simple place the mold under warm water for about 15 seconds.

    Too bad my mom didn’t know about this when we were kids! We all loved our homemade root beer and ice cream floats, only we called them “Black Cows”. Maybe that’s a Wisconsin term, since I haven’t heard it used anywhere else.
