Quick & Easy Salted Caramel Corn

Salted caramel corn is one of the things that makes my soul happy. I love this unexpected twist on this classic treat. I’ve gotten asked about how I pull this awesome snack together so I am thrilled to share it here, with you.

Ingredients: 

  • 8 cups popped popcorn (2 microwave bags)
  • 1/3 cup brown sugar
  • 1/2 cup corn syrup
  • 1 tsp baking soda
  • 1 tsp vanilla
  • salt to taste

Directions:

  • Put popped popcorn into a large mixing bowl and set aside
  • Put sugar and syrup in a large saucepan on med-high heat and bring to a boil
  • Once boiling add in vanilla and baking soda. Boil for one minute. 
  • Pour mixture over popcorn and mix well
  • Spread out on a sheet pan to cool and sprinkle with salt to taste
  • Let cool and store in an airtight container

To keep salted caramel corn fresh make sure to keep it in an airtight container, like a resealable plastic bag and store it away from heat, moisture, and humidity. Popcorn and caramel corn does not spoil, they just lose their flavor and crunch.

How to keep salted caramel corn from sticking together

Keeping salted caramel corn from sticking together is super easy. Once you have it made, lay it out in a single layer on a cookie sheet or parchment paper and let the caramel dry. Once the caramel is dry you can crack apart any pieces that have stuck together and put them in a container. Remember if you’re storing your caramel corn to put it in a resealable plastic bag. 

Are caramel corn and kettle corn the same thing

Caramel corn and kettle corn start out the same, but how they are cooked is what makes them different. Kettle corn is made in a large iron kettle that has been oiled while caramel corn is cooked like typical popcorn. Popcorn turns into caramel corn when the salt and caramel are added to the popped corn.
