There’s very little I like better in life than an uber easy recipe. Sure, I like to cook as much as the next girl, but my days are spent painting or building or fluffing something, not cooking in the kitchen. #AintNobodyGotTimeForThat. So if I can make a quick and easy recipe that makes my tummy and watch happy at the same time, then it’s a keeper. Like my s’mores poke cake – it’s super simple, but oh so good.
Ok, so “recipe” might be a little too harsh. Anything that’s made with a box cake mix is more of a method I think… if you wanna make it all from scratch, be my guest (it just won’t be as easy.) You’ll need:
Ingredients
- yellow cake mix (and ingredients on box)
- chocolate frosting (Hershey’s is the bomb diggity)
- 8 oz jar of marshmallow fluff
- 8-10 graham crackers, crushed
- 1/4 cup milk
Tools
- 9×13 baking dish
- wooden spoon
- small sauce pan
Start with a yellow cake mix (or you could use chocolate if you want it to be extra rich). Mix and bake according to the directions on the box in a 9×13 pan. While it bakes, melt the marshmallow fluff in a small sauce pan with the 1/4 cup of milk.
When the cake is finished baking, pull it out of the oven and immediately poke holes all in the top with the handle of the wooden spoon. Pour the marshmallow creme mix all over the top and let the entire cake cool.
Once cool, frost with chocolate icing and top with crushed graham crackers.
See, I told you my s’mores poke cake was easy! It’s the perfect dish for pot lucks & large dinners, because it feeds quite a few with just a little effort.
