Turkey Club Panzanella

Hey there Shabby Creek friends, it’s Christine again, from First Home Love Life, and today I’m going to switch it up on you and share a super easy summer recipe! Did I ever tell you, I went to culinary school? No? Well I did…

When I went to culinary school, I thought at the time I wanted to start up a catering business. Garde Manger (which means ‘keeper of the food’ in French) was my favorite subject because there was a lot of preparation of chilled foods such as salads, hors d’œuvres, appetizers, and terrines, so it made sense that I loved it so much because it’s what I thought I wanted to do! Long story short…I soon learned that life in the hectic kitchen and event planning world was not for me, but my love for preparing and cooking great food never died. 🙂

In my own home, I love to get creative with our meals, but not make them so over the top that you need a million different ingredients. No no no…Actually, I’m the total opposite to that and like to keep things super simple, clean, easy to prepare, but jam packed with flavor! Most of my meals only have a handful of ingredients and usually range around 15-20 minutes to make. Just like this delicious turkey club panzanella, which is a flavor profile most of us know and love but this one has a twist!

Here’s what you’ll need…(makes 2 servings)

  • 1/2 loaf of day old crusty bread (baguette or similar)
  • 3 thin sliced boneless skinless turkey breast cutlets*
  • 1 cup of chopped iceberg lettuce
  • handful of grape tomatoes
  • 2 tablespoons mayo
  • about a tablespoon of bacon bits
  • 1 clove garlic
  • 1 teaspoon white wine vinegar
  • drizzle of olive oil
  • salt and pepper

*Substitute cutlets for sliced deli turkey breast if you don’t want to make them.

I love making a batch of turkey cutlets and storing them in the fridge for the week. They make for really easy grab and go lunches and delicious turkey sandwiches! To make them I just sprinkle store bought rotisserie seasoning on both sides and cook them in a bit of olive oil in a sauté pan.

Cut up all of your lettuce, turkey, bread, and tomatoes into bite sized pieces and toss everything into a big bowl.

In a small mixing bowl, chop up your garlic clove, and add your mayo, vinegar and a drizzle of oil. Sprinkle with salt and pepper and mix together.

Pour the dressing over your salad and toss together. Sprinkle with bacon bits on top.

Lunch (or dinner) is served!

Super simple, super tasty. Just like a classic turkey club sandwich from your favorite diner but in salad form 🙂
