I finally found a gingerbread cake recipe that looks good - and also easy!

The Best Ever Gingerbread Cake Recipe

Ingredients

  • 1/2 cup sugar
  • 1/2 cup butter or margarine
  • 1 egg beaten
  • 1 cup molasses
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 1/2 cups flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cloves
  • 1 cup very hot water

Instructions

  1. Cream sugar and butter. Add egg and molasses.
  2. Beat well. Add dry ingredients and hot water. Beat until smooth. Batter will be very thin.
  3. Bake in a greased 9 x 13 pan for 40 minutes at 350 degrees.
  4. Serve topped with whipped cream and garnished with crushed candy canes.
