Turkey Club Panzanella

Ingredients

  • 1/2 loaf of day old crusty bread baguette or similar
  • 3 thin sliced boneless skinless turkey breast cutlets*
  • 1 cup of chopped iceberg lettuce
  • handful of grape tomatoes
  • 2 tablespoons mayo
  • about a tablespoon of bacon bits
  • 1 clove garlic
  • 1 teaspoon white wine vinegar
  • drizzle of olive oil
  • salt and pepper

Instructions

  1. Cut up all of your lettuce, turkey, bread, and tomatoes into bite sized pieces and toss everything into a big bowl.
  2. In a small mixing bowl, chop up your garlic clove, and add your mayo, vinegar and a drizzle of oil. Sprinkle with salt and pepper and mix together.
  3. Pour the dressing over your salad and toss together. Sprinkle with bacon bits on top.
