Crockpot Italian Sausage and Pepper Sandwiches

Ingredients

  • 1 pound Italian sausage links 5 sausages
  • 2 tbsp minced garlic
  • 1 16-ounce bag frozen pepper stir-fry (with sliced green/red/yellow peppers and onions)
  • 1/2 cup mild banana pepper rings drained
  • 1 26-ounce jar tomato and basil pasta sauce
  • 1 6-ounce can tomato paste with basil, garlic and oregano
  • 1 tbsp italian seasoning basil/oregano/thyme
  • pepper to taste
  • Provolone cheese slices or shredded mozzarella for topping optional
  • 5 Hoagie or sandwich rolls of your choice

Instructions

  1. Place sausages in slow cooker.
  2. Stir in the garlic, frozen pepper mix, banana peppers, tomato sauce, tomato paste, italian seasoning & pepper
  3. Cover, set heat to LOW and simmer 8-10 hours (or 4-5 hours on HIGH)
  4. 20 minutes before serving, wrap your hoagie rolls in aluminum foil and throw in a 350* oven for 10 minutes to warm (alternately, wrap two at a time in a paper towel and microwave for 20-30 seconds).
  5. If desired, place a slice of provolone cheese into each hoagie roll.
  6. Spoon a sausage and the red sauce pepper mixture into the hoagie rolls.
  7. Top with another slice of provolone cheese or shredded mozzarella if desired
