  • 1 cup crushed pineapple
  • boneless skinless chicken breast
  • 1 cup catalina dressing


  1. Cut chicken (about 3 breasts) into bite size pieces and cook in a little olive oil and season with salt and pepper. Cook until brown then set aside to cool.
  2. In a bowl add 1 cup of crushed pineapple and 1 cup of Catalina dressing and mix until well blended.
  3. Pour the sauce into a pan and let reduce until thick.
  4. Add chicken to pan and stir together.
  5. Serve over rice or any other grain/pasta of choice.
  6. Serve and Enjoy!
