1shallotfinely chopped (you could use 1/4 cup onion instead)
3cupschicken broth
2cane Campbellās cheddar soup
12ozbag of frozen broccoli florets
salt & pepper to taste
shredded cheddar for garnish
Instructions
In a heavy bottom large pan, cook the shallots in the olive oil for 1-2 minutes until softened.
Pour in the chicken broth into the pot and reduce for 4-5 minutes.
Add in the cheddar soup and whisk together. Once it is all well combined, add in the broccoli and cook for an additional 4-5 minutes to combine all the flavors.
Add salt and pepper to taste, because reducing the chicken broth will make it fairly salty.
