Broccoli Cheddar Soup {a 15 minute meal}

Ingredients

  • 1 tablespoon olive oil
  • 1 shallot finely chopped (you could use 1/4 cup onion instead)
  • 3 cups chicken broth
  • 2 cane Campbellā€™s cheddar soup
  • 12 oz bag of frozen broccoli florets
  • salt & pepper to taste
  • shredded cheddar for garnish

Instructions

  1. In a heavy bottom large pan, cook the shallots in the olive oil for 1-2 minutes until softened.
  2. Pour in the chicken broth into the pot and reduce for 4-5 minutes.
  3. Add in the cheddar soup and whisk together. Once it is all well combined, add in the broccoli and cook for an additional 4-5 minutes to combine all the flavors.
  4. Add salt and pepper to taste, because reducing the chicken broth will make it fairly salty.
  5. Garnish with shredded cheddar.
