Ingredients
1cupcrushed pineapple
boneless skinless chicken breast
1cupcatalina dressing
Instructions
Cut chicken (about 3 breasts) into bite size pieces and cook in a little olive oil and season with salt and pepper. Cook until brown then set aside to cool.
In a bowl add 1 cup of crushed pineapple and 1 cup of Catalina dressing and mix until well blended.
Pour the sauce into a pan and let reduce until thick.
Add chicken to pan and stir together.
Serve over rice or any other grain/pasta of choice.
