Servings 12

  • 8 whole eggs
  • 2 cups of granulated sugar
  • 2 cups of corn syrup clear - not dark
  • 1/2 cup butter - melted
  • 1 tablespoon vanilla
  • Pinch of salt
  • 2 cups of chopped pecans
  • 8 cups of bread torn into small pieces

  1. In a large mixing bowl, mix together the sugar, corn syrup melted butter, vanilla and salt until well combined.
  2. In a separate bowl, lightly beat the 8 eggs together, then add them to the sugar mixture. Whisk together to combine completely.
  3. Add in the pecans and stir well.
  4. Put all of the bread pieces into a 12x9 casserole dish, then pour all of the mixture on top. Make sure every piece of bread is soaked with the wet mix.
  5. Cover with plastic wrap and let sit for at least 30 minutes (or overnight in the refrigerator.)
  6. Bake at 425 degrees for 35-45 minutes - until top is brown all over and center is set. Let cool before serving.
