Iced coffee – yum! Caramel Vanilla Iced Coffee is the stuff that fueled me through my book writing (which is now all written and in editing – eek!) I drink copious amounts of coffee anyway, but when I need to push through that 15th hour of work, an iced coffee is sure to be within reach. Since I have to travel 20 minutes to find civilization, I’m not going to be making a drive-thru run. No sirree, I just make it. I’d like to say that I’m sharing a recipe today, but it’s not recipe. It’s more like, how to make fancy coffee.
I start with a half a glass of coffee, fresh and hot from my Keurig. Then I squeeze in some old fashioned caramel syrup (the ice cream kind) – about a tablespoon or so. I think. I don’t really measure, I just give it a good squeeze. Next, I pour in Natural Bliss vanilla creamer. Have you tried this stuff? I’m not a fan of bottle creamer, because it normally has a weird texture to it {umm… if liquid can have texture.} Natural bliss is made from milk, cream, vanilla and sugar. All natural stuff, no gunky chemicals. Love. This. Stuff.
Back to the coffee… I pour in the creamer, give it a stir, add my ice and enjoy. See, told you it wasn’t really a recipe. It’s just my cheap-o version of iced coffee. And it’s delish!
As I was on about my 6th glass of this one afternoon last week, it made me wonder, do my friends drink iced coffee, too? I was kinda shocked that most of my friends don’t. However, I did find a few that do – and they’re going to share their recipes, too! What’s better than iced coffee? Iced coffee with friends!

I drink something similar in the mornings. The night before I fill my to go glass up ¾ of the way full with vanilla soy milk and then top it off with some of my husband’s fancy coffee. I put it in the fridge overnight so it is nice and cool and refreshing (I don’t like ice, it waters it down *smile*). I may have to try it your way sometime. I know I am grumpy if I don’t have my morning ice coffee.

Sounds great, Gina! I haven’t tried the Natural Bliss creamer, but I’ll look for it the next time I run out of my usual. It sounds good! And congrats on finishing the book!! Yay!!!! 🙂

Yummmm!! Theres a place nearby me that makes THE BEST hazelnut mocha iced coffee. But when I dont have time (or money) to stop and buy fancy coffee, I’m always looking for ways to make similar things myself.
Heres a tip for you that I learned from another coffee shop I used to go to: Freeze some coffee in an ice-cube tray, then use those in your iced coffee; that way it doesnt get watered down when it melts!! The place I learned it from actually uses frozen espresso cubes, but plain coffee works too! I have a tray of them in my freezer now ^.^

I make a pot of fresh coffee nightly. once it’s brewed I pour it into a small pitcher. Stir in my sugar, my creamer and set it in the fridge over night.
Makes it easier then having to brew a pot fresh every morning with a one year old who steals my coffee anyway.
