Lemon Meringue Martini

A few weeks ago when I started sharing cocktails, I wasn’t even sure if anyone would care. But you did – because they’ve become some of the most popular posts I’ve done in quite a while. I pretty much put myself through college while working in a bar, so I’m fairly good at throwing drinks together, partially due to experience and somewhat due to the fact that I like to drink – haha! So this week’s summertime sipping companion is my Lemon Meringue Martini. It’s about as simple as it gets and it tastes so good that you’ll have way more of them than you should.

Lemon Meringue Martini

Ingredients:

  • Juice of one fresh lemon
  • 1/2 oz of simple syrup
  • 1 oz of marshmallow vodka (that is dangerously good stuff)
  • splash of Pellegrino

Fill a cocktail shaker 1/2 full with ice, then add in the juice, syrup and vodka. Shake for 20-30 seconds until reallllllly cold, then pour into a glass and top off with Pellegrino until full (it only takes a little).  If you wanted to get really fancy, you could rim the glass with graham cracker crumbs, but I’m a lazy bartender, so we drink them straight up as is. And they’re out of this world delicious!

We may have had a few too many of these after my daughter’s wedding because what better occasion to sip some pie than a simple & sweet southern wedding?

    I think the reason DIYers like cocktail recipes is because we often feel like we need a drink after (or during!) a project. This one looks delicious. I have not seen marshmallow vodka but will now need to go on the hunt!

      Pellegrino is a sparking mineral water, you can buy it at any grocery store 🙂 Enjoy!
