Easy Homemade Pimento Cheese

Love pimento cheese? This homemade version is a thousand times better than any store bought – you’ll never want pre-made pimento cheese again!

Homemade pimento cheese - sooooo much better than the store bought stuff!

When in the world did Pimento Cheese become a bougie thing that every fancy restaurant put on the menu? Growing up poor in the south, it was what we ate when we couldn’t afford to eat. Seriously. On a recent trip to Savannah and Charleston, I kept seeing it over and over. As an appetizer, as a main dish – it was even made into fondue at a pub!

Of course, being the true southern girl that I am, we tried it everywhere. But we hadn’t made pimento cheese in YEARS. But when we got back home my husband pulled out an old recipe and whipped up a new batch… and a few months later he’s probably made it a couple of dozen times. Every time one of our friends stop by we hear, “Ya’ll got any of that good pimento cheese?” Yes, my friends, it’s truly THAT good!

So I coaxed him into sharing his “top secret” recipe with us – but it’s really a classic recipe that’s been around forever and a day. It’s just his spin on it. The main difference is we use far less mayo than almost any recipe you’ll find, because not only is the texture better, the flavor is, too.

Additionally, we only use extra sharp white cheddar – which I know is completely different than the store bought kind that comes with orange cheese. But it’s SO much better!

I’ve always loved pimento cheese, and growing up, we always had it on picnics — pimento cheese sandwiches, homemade potato salad and fried chicken. I never thought of is as something economical at all, but a treat. Although I’ve always made it, the Palmetto Pimento cheese brand made in South Carolina is amazing:-)
