  • 4 granny smith apples peeled, cored and diced
  • 4 golden delicious apples peeled, cored and diced
  • juice of 2 Meyer lemons or regular lemons if you prefer
  • 1/2 cup of light brown sugar
  • 1 tsp cinnamon
  • pinch of salt

For the topping:

  • 1/2 cup of granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all purpose flour
  • 3 cups old fashioned oats
  • 6 TBS butter cold in small cubes
  • 2 TBS maple syrup
  • 1/2 cup very cold water


  1. Preheat the oven to 350 degrees. In a bowl, mix together all of the ingredients until throughly combined and put into an un-greased 9x13 baking pan.
  2. In the bowl of a mixer, place in the first five ingredients (all the dry plus butter) and mix with a paddle on medium speed until butter is broken up into small pebbles. (You can also do this with a dough cutter.) Then, add in the maple syrup and  combine a few more seconds. After the syrup is distributed, add in the water, 1/4 cup at a time, until you have a crumbly consistency. Scatter the mixture on top of the apple filling and bake in a 350 degree oven for 1 hour.
  3. After baking, let the crisp cool for a few minutes before serving. If you wanna up the ante, add a scoop of ice cream for an out of this world experience.
