Easy Sweet & Sour Chicken
In my fast paced world, I need fast paced food. Unlike most southerners, we’re not a fried chicken every night kinda family – but I do like a good chicken recipe – like this sweet & sour chicken. With only 3 ingredients, it’s fast, easy & budget friendly, too!

sweet & sour chicken For the chicken part, all you need is boneless skinless chicken (whatever parts you prefer, I used chicken breasts), crushed pineapple & Catalina dressing. Yep, that’s it.

bite size chicken First, cut the chicken into bite size pieces, cook them in a little olive oil, and season them with salt & pepper. I did mine in a couple of batches so they’d brown well. Once you have them all browned, take them out and put on a plate and get ready for the sauce. {By the way, I used 3 whole breasts}

pineapple & catalina chickenFor the sauce, you’ll need 1 cup of crushed pineapple with the juice, and one cup of Catalina dressing. I just measure them together all at once. It’s a 50/50 ratio, so use as much as you need. Mix them together so it’s all one sauce.

easy sweet & sour sauce After your chicken is all done, in the same pan, pour in the sauce and let it reduce for a few minutes, until it becomes thicker.

quick chinese food sweet & sour chicken Then slide your chicken back in and stir it all together. And you’re done!

easy sweet and sour chicken recipe Serve over rice, add steamed broccoli on the side, and you’ve got dinner in less than 30 minutes (just long enough to cook the rice.) Enjoy!

Ingredients

  • 1 cup crushed pineapple
  • boneless skinless chicken breast
  • 1 cup catalina dressing

Instructions

  1. Cut chicken (about 3 breasts) into bite size pieces and cook in a little olive oil and season with salt and pepper. Cook until brown then set aside to cool.
  2. In a bowl add 1 cup of crushed pineapple and 1 cup of Catalina dressing and mix until well blended.
  3. Pour the sauce into a pan and let reduce until thick.
  4. Add chicken to pan and stir together.
  5. Serve over rice or any other grain/pasta of choice.
  6. Serve and Enjoy!

    Shut up! Do you know how many different sweet and sour recipes I have tried over the years with varying results? I am sooo gonna copy this and use it. I would probably add pieces of the pineapple chunks in there, too. YUM…xo Diana

    Oh- Wait- I see now that you used CRUSHED pineapple. I read it too fast and thought you were just using the juice. GREAT idea!!!!!

    Loved this recipe! So did my family. I was a little skeptic of such simple ingredients but it really blended well. Will definitely make it again!

    I made this and LOVED it . Used fresh pineapple (bleneded in my Ninja) and added a finely chopped pineapple. I also added a 1 inch piece of grated ginger. Fantastic!!

    Amazing!! I made this tonight with rice and broccoli. My Family loves it!!!! I used Catalina rich and tangy. It was so simple and FULL of Flavor. So adding this to my recipe book! Thank you for this.

    I made this yesterday and I was also suspicious, but it turned out really good and everyone loved it: From my 5 year old to my 24 year old and myself included. I added some garlic and ginger, served it over rice with a sprinkling of cashews on each plate and broccoli on the side. Delish! Oh, and before cooking the chicken I put the cut up chunks in a baggie, poured some soy sauce and a Tb or so of corn starch and shook it up before adding to the skillet. I am glad I made a double batch: Everyone is looking forward to having it next week again! Thanks!

    I cannot find Catalina dressing so would french-style be good?

      French would probably work Dana, I think Catalina is just a bit sweeter. Give it a try, they are very similar, good luck!
